Pickled Beet, Arugula & Goat Cheese Sandwich

  • 2 ounces goat cheese, softened

  • 1 tablespoon snipped chives

  • 1 tablespoon chopped fresh dill

  • 1 teaspoon extra-virgin olive oil

  • Pinch of salt

  • Ground pepper to taste

  • 2 slices whole-wheat sandwich bread, lightly toasted

  • 2 ounces sliced pickled beets

  • 1 cup arugula

Mash goat cheese, chives, dill, oil, salt and pepper together in a small bowl. Spread the goat cheese mixture on one side of each toast slice. Layer on beets and arugula. Top with the second slice of toast, cheese-side down, and cut the sandwich in half.
